Freezing is a great opportunity to enjoy the taste of fruits, berries, and vegetables at any time of the year. But eggplants require special attention during the freezing process. Eggplants are frozen for the winter in different forms; whole and chopped, blanched, fried, stewed, and baked. But you should not freeze raw eggplants. Otherwise, they will taste bitter.

Wash the eggplants and cut them into slices. The thickness should be no more than 7 mm. If you come across bitter vegetables, sprinkle them with salt and leave for half an hour. Then rinse and pat dry. Fry over medium heat with vegetable oil for a few minutes on each side to brown the eggplant. Transfer the sautéed vegetables to a paper towel to drain off excess fat.

Put the eggplants on a baking sheet or tray and put them in the freezer for a few hours—sort vegetable pieces into bags or trays and store them in the freezer.

Heat some vegetable oil, add the diced eggplant and fry until tender, stirring occasionally. It is not necessary to salt and pepper them. Let the vegetables cool completely. Transfer the eggplants to a container or bag for storage in the freezer.

Wash the eggplants and cut them into slices—season with salt before frying to remove unwanted bitterness. Drain the dark juice, rinse the eggplants and pat dry with a towel. Then fry in a pan on both sides, adding sunflower oil. Place the plates on the paper to absorb excess grease.

When the eggplant has cooled, transfer it to a baking sheet or tray. If you are making multiple layers, cover each one with cling film. Put in the freezer for a few hours, then place in bags.
