Step by Step: How to Make a Delicious Mushroom Ceviche

Mushroom Ceviche

1 cup of lemon juice

Four tablespoons olive oil

400 g of mushrooms, quartered

1 seeded and finely chopped red bell pepper

1 green bell pepper, seeded and chopped finely

2 cups of Peruvian corn kernels, cooked

1/2 cup red onion, finely chopped

1/2 cup parsley, finely chopped

1. In a large bowl, add the mushrooms, red and green bell peppers, corn, and onion. Then in a cup, mix the lemon juice with the olive oil and stir to create a sauce. Finally, add the mixture with the rest of the ingredients to the bowl.

2. Season with salt and pepper and let it rest for approximately 20 minutes.

3. In individual containers, distribute the mushroom ceviche and add the chopped parsley on each of the portions.
