This vegetable sauce is one flavourful stew that you can serve with several dishes such as rice and pasta, among others.

The classic vegetable stir-fry is made with onion, garlic, and red and green peppers. If you’d like, you can also include any other vegetables. In this recipe, we have optionally added the carrot, the leek, and the zucchini; you can decide whether to use them or not.
Start preparing your vegetable sauce, wash all the ingredients well, and chop them into small cubes. You can choose to crush the garlic or add it to the preparation, minced into tiny squares.
Take a nonstick skillet, add a couple of tablespoons of olive oil, and heat on a medium heat setting. Once hot, start by incorporating the ingredients that take the longest to cook: garlic and onion. Leave on the fire until the onion begins to turn translucent.
Then add the red and green peppers, salt and pepper, and cook for 3 minutes. If you want to add carrot and leek, this is the time to add them to your vegetable sauce. Keep continually stirring to avoid sticking.
Peel your ripe tomatoes and add to the other vegetables. You can buy a jar of tomatoes already peeled or peel it at home. If you want to add zucchini, you can add it together with the tomato at this point.
You will already have all the ingredients of your vegetable sauce cooking over medium heat; now, it will be essential to wait until all the vegetables are soft before removing it from the heat. Keep stirring frequently.
This sauce should be juicy, and if you notice that it’s beginning to dry, you can add a little water, salt, and pepper and leave it to cook for a couple of minutes.
